1/2 cup cooked brown rice
1/4 cup corn
1/4 cup black beans, rinsed and drained
1/4 red pepper, chopped
10 grape tomatoes, halved
1 Tbsp cilantro or parsley, roughly chopped
1/8 tsp Himalayan salt
1/2 tsp chili powder
1/4 tsp cumin
1/4 tsp olive oil
Combine all ingredients, except the olive oil, in a bowl. Heat a skillet on med-high heat, and add the olive oil. Add the rice mixture to the pan, and cook for 3-4 minutes, stirring frequently.
